Paleo Lunches & Breakfasts

We have less than two weeks now until we start with the Paleo Transition, I’ve decided that Saturday, March 14, 2015 is the day that we will begin our change.  I figure I’ll start off that morning making us black coffee (just the thought of black coffee grosses me out, BUT I’m going to have to get used to it, dammit!) and then I’ll make us some breakfast, probably some egg muffins (the kind you make in a muffin tin, full of yummy goodness) and some bacon.  Who doesn’t love bacon!?!!?  Lunch who knows, maybe a salad with eggs as protein and avocado for a healthy fats (along with veggies) and a homemade dressing from the book I’ve been reading and finally for dinner, I’ll make a protein, with some sweet potato and lots of veggies.

The key will be preparation and planning out meals for my ease instead of trying to plan meals on the fly.  I think I’ll get too stressed out with that approach, at least initially so my best bet is to plan things out.  Like this:

In the last two weeks, I’ve been scouring over recipes and ideas that have caught my eye over on Pinterest.  Jeff also bought me and I’ve since read it from cover to literally cover, called “Paleo Lunches and Breakfasts On The Go”, by Diana Rodgers, NTP.

Paleo Lunches & Breakfasts

On a weekend where Jeff was away a couple of weeks ago, I literally lost track of the time and got totally enraptured in reading that book like an obsessed fiend.  I’m trying not to think about the transition too much, but I’ll pin recipes here and there.  Mainly, I’m excited for this change.  The biggest challenge will be: no creamer in coffee, no sugar and cutting out pop.  I don’t think the complete and total elimination of grains will be devastating to me, because we don’t eat a hell of a lot of it to begin with.  I have noticed that in the last two weeks, though, I have been making a bit of pasta to eat with out dinner a few times, here and there.  I think that’s because my subconscious knows what’s coming so I’m getting my fill now.  It’s been kind of nice pairing pasta with fresh vegetables and sautéing them in avocado oil (another fantastic purchase of mine – completely odorless and tasteless – it cooks much like how coconut oil does – LOVE IT)….

Anyways, I don’t have much more time to write so we’ll leave it at that and I promise these Paleo posts will get more exciting when we get going.  Until then…….



  • I don’t think I could deal with no sugar. I feel like I would die lol.

    Okay they key to drinking black coffee is to purchase GOOD coffee. I can’t drink my coffee black at work because our coffee with disgusting (as in this coffee addict can only drink one cup because otherwise I get gut rot, ugh). But if the coffee is good I don’t feel the need to add anything to it. It does take a little getting used to but I promise you can do it!

  • This sounds cool and insanely hard all at the same time! How long are you doing it for?!

  • Ugh I feel like I’m going to die too, but I’m gonna give it an honest go. 🙂

    We drink keurig k-cups at home, same with work coffee. I guess I’m not a coffee connoisseur so I’ll have to refine my taste a little and figure out what tastea good instead of drinking something that tastes like a jock strap. Hahahhahahah!

    I fully expect to be a moody son of a bitch for the first couple of weeks as I adjust… Should be fun times! Lol

  • I’ve heard it can be quite the adjustment… “They” recommend either easing into it or bam, go cold turkey. They also say you should clean out your cupboards and toss anything non-Paleo, you’re not tempted to grab garbage when you’re hugry or when your head is messing with you. We’re going cold turkey, might as well get it done!

    How long are we doing for it? Hmm not sure… At least a few months, we’ll have cheat days now and again but nothing outrageous to sabotage the hard work.

  • No pasta? Black coffee?
    Crikey Lindsay, good luck. You’ve got more willpower than me. I went on the fast diet. I lasted less than a week.

  • Sounds shitty, doesn’t it? Lol! The pasta I won’t miss so much but black coffee does NOT sound appealing.

    I would never last as long as a week on a fast, good for you girl! Now THAT doesn’t sound appealing. Lol

  • Oooo I LOVE black coffee far more than coffee with milk in!!! You’ll get used to 🙂 Wait till you swap sugar for honey in your coffee and have no milk… that’s an entire different taste!!! hahaha!!!

    Wish I could use Avocado oil but I’m allergic to Avo!!! All these epic hair products and stuff…. I can’t touch them! Lame……… 🙁

  • No way! I’ve never met anyone with an avocado allergy. That’s crazy. Oh well, there’s always coconut oil you can use as an alternative.

    I can’t wait, too! It’ll be interesting, to say the least.
